Keto Tomato Basil Chicken
Keto Tomato Basil Chicken is your answer to a weeknight Keto Dinner. You're sure to fall in love with this low-carb recipe. Imagine mouthwatering chicken, the tantalizing flavor of garlic and basil; all smothered in a rich tomato sauce! Yum, Yum, Keto Yum.
INGREDIENTS
- 1 pound boneless chicken breasts or thighs
- 3 cloves garlic
- 2 tablespoons basil
- 1 tablespoon olive oil
- 1 tablespoon coconut oil
- 1/2 diced onion
- 1 1/2 tablespoons nutritional yeast
- 1/2 cup full fat coconut milk
- 1/2 teaspoon arrowroot powder
- 1/2 cup water
- 1 cup cherry tomatoes
- salt and pepper to taste
- Kamala olives (optional)
INSTRUCTIONS
- Sauté onions in the coconut oil over medium heat until they are translucent.
- Add the chicken next and cook together for about 10 to 15 minutes flipping once until chicken is done.
- Next place the garlic in a food processor and pulse until it is finely minced.
- Add the basil, nutritional yeast, salt and pepper, and the olive oil and pulse until the basil becomes minced.
- In a bowl mix the arrowroot powder with the water and then add the coconut milk and the pesto from the food processor.
- Pour the sauce mixture into the pan with the chicken and add the tomatoes.
- Allow to simmer for 5 to 10 minutes and then serve.
