Keto Roasted Eggplant

Keto Roasted Eggplant is the perfect low carb compliment to any dinner. It's tender, tasty and super easy to prepare.

INGREDIENTS
  • 1 eggplant cut into large strips
  • 3 teaspoons minced garlic
  • 2 tablespoons avocado oil
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste
INSTRUCTIONS
  • Preheat oven to 400 degrees.
  • Line a baking sheet with parchment paper.
  • Slice eggplant into 1/2 inch strips and place evenly on the baking sheet. Drizzle tops with avocado oil and sprinkle minced garlic and salt and pepper.
  • Bake for about 15 minutes and then flip over to bake between 10-15 minutes or until the eggplant is brown.
  • Remove and then sprinkle tops with parmesan cheese and serve.
