Keto Loaded Cauliflower Soup

Keto Loaded Cauliflower Soup will have you reminiscing about loaded potato soup. You'll never miss the potatoes. This recipe is Low-Carb, Easy, Crazy Delicious, and Perfectly Keto Legal. 

INGREDIENTS:
  • 2 cauliflower heads cut into medium florets
  • 8 bacon strips
  • 2 teaspoons thyme
  • 4 garlic cloves (chopped)
  • 1 medium onion (chopped)
  • 6 cups chicken broth
  • 1 cup heavy whipping cream
  • 1/2 cup sour cream
  • 1 1/4 cups cheddar cheese
  • salt and pepper to taste
INSTRUCTIONS:
  • Fry bacon in a pot until crispy, crumble it and remove to a plate.
  • Sauté garlic and onion in the bacon grease for about 5 minutes.
  • Add cauliflower, salt, pepper, and thyme to the pot and cook for another 5 minutes mixing well.
  • Add chicken broth and cook for about 15 minutes or until cauliflower is tender.
  • Blend about 3/4 of the cooked cauliflower in a blender until smooth.
  • Add the blended cauliflower back into the pot and simmer about 5 minutes
  • Add the sour cream and 1 cup cheddar cheese and mix well.
  • Garnish with the remainder cheddar cheese and the bacon bits and serve hot.
