Keto Loaded Cauliflower Soup
Keto Loaded Cauliflower Soup will have you reminiscing about loaded potato soup. You'll never miss the potatoes. This recipe is Low-Carb, Easy, Crazy Delicious, and Perfectly Keto Legal.
INGREDIENTS:
- 2 cauliflower heads cut into medium florets
- 8 bacon strips
- 2 teaspoons thyme
- 4 garlic cloves (chopped)
- 1 medium onion (chopped)
- 6 cups chicken broth
- 1 cup heavy whipping cream
- 1/2 cup sour cream
- 1 1/4 cups cheddar cheese
- salt and pepper to taste
INSTRUCTIONS:
- Fry bacon in a pot until crispy, crumble it and remove to a plate.
- Sauté garlic and onion in the bacon grease for about 5 minutes.
- Add cauliflower, salt, pepper, and thyme to the pot and cook for another 5 minutes mixing well.
- Add chicken broth and cook for about 15 minutes or until cauliflower is tender.
- Blend about 3/4 of the cooked cauliflower in a blender until smooth.
- Add the blended cauliflower back into the pot and simmer about 5 minutes
- Add the sour cream and 1 cup cheddar cheese and mix well.
- Garnish with the remainder cheddar cheese and the bacon bits and serve hot.
