Keto Country Biscuits
These country biscuits are light, tender, a bit crumbly and the perfect match for a sausage patty or crispy bacon. Add egg and cheese and you have the perfect breakfast biscuit!
INGREDIENTS
- 1 1/4 cup almond flour
- 1/4 cup coconut flour
- 1/4 teaspoon Himalayan pink salt (fine)
- 1/2 cup sour cream
- 1 tbsp. baking powder (aluminum free)
- 2 large eggs
- 4 tbsp. melted butter
- 1/4 teaspoon coarse sea salt (reserved for topping; optional)
INSTRUCTIONS
- In a large bowl, combine flour, salt, and baking powder and set aside.
- In a separate bowl combine eggs, sour cream, and melted butter mixing until well blended and smooth.
- Add the dry ingredients that you set aside and mix until thoroughly incorporated.
- Scoop 1/4 cup of batter and drop into a muffin mold or a flat baking dish, top with a little course sea salt (optional) and bake on 450 degrees until you can insert a toothpick that comes out clean; approximately 10-12 minutes until the tops are golden brown.
- Allow to cool approximately 5 minutes and serve.
