Keto Chicken Croquettes With Creole Sauce
Keto Chicken Croquettes with Creole Sauce. These are Oh-so-yummy and Easy-to-make! They work for an anytime snack or meal.
INGREDIENTS
- 2 cups shredded cooked chicken
- 1 tablespoon poultry seasoning
- 1/4 cup almond meal
- 1/4 cup finely chopped onion
- 1/2 cup shredded cheddar cheese
- 2 eggs
- 2 tablespoons avocado oil
For the Creole Sauce
- 1/4 cup Primal avocado mayonnaise
- 1/4 cup sour cream
- 1 1/2 teaspoons Dijon mustard
- 1 1/2 teaspoons lemon juice
- 1/2 teaspoon creole seasoning
- 1/2 teaspoon garlic powder
INSTRUCTIONS
- In a large bowl, combine chicken, cheddar cheese, almond meal, poultry seasoning, and eggs and mix until blended.
- Cover and refrigerate for about 30 minutes.
- In a small bowl mix the creole seasoning, mayo, sour cream, Dijon mustard, lemon juice, and garlic powder until well combined.
- Cover and refrigerate until ready to serve.
- Preheat air fryer to 400 degrees.
- Divide the chicken into eight portions and shape into patties.
- Arrange the patties in a single layer inside the air fryer basket and coat both sides with avocado oil.
- Half way through the cooking turn patties and air fry for about 10 minutes or until lightly browned and the cheese is melted.
- Serve with the Creole sauce.
