Keto Chicken and Cauli-Rice Casserole
Indulge in our mouthwatering Keto Chicken and Cauli-Rice Casserole! With tender shredded chicken, creamy cheese, and a burst of flavorful spices, every bite. Low-carb and utterly delicious – it's keto dining at its finest!
Ingredients
- 4 cups cooked shredded chicken (approximately 4 chicken breasts)
- 1 cup heavy cream
- 1 cup cream cheese, softened
- 1/2 teaspoon garlic powder
- 1 tablespoon onion powder
- 1 cup sharp cheddar cheese, shredded (or parmesan)
- 1 teaspoon smoked paprika
- Black pepper, to taste
- 1/2 cup chicken stock
- 36 oz Riced Cauliflower
Instructions
- Preheat your oven to 400ºF. Lightly spray a 9×13-inch pan with olive oil cooking spray and set it aside.
- Boil chicken breasts, set aside to cool, then shred. You'll need 4 cups.
- Cook cauliflower according to package directions. Allow to cool down for a couple of minutes. Discard excess water from the cooked cauliflower.
- In a large bowl, combine chopped chicken, heavy cream, cream cheese, onion, garlic powder, onion powder, pepper, paprika, chicken stock, and cauliflower rice. Pour the chicken mixture into the prepared pan and top with shredded cheddar cheese.
- Bake the casserole uncovered for 20 minutes. Garnish with chopped parsley flakes. Serve and enjoy!
