Keto Blueberry Mini Muffins
Keto Blueberry Mini Muffins make the perfect low-carb breakfast when paired with your favorite coffee.
INGREDIENTS
- 2 cups almond flour
- 1/4 cup pecan flour (optional)
- 1 tablespoon baking powder
- 1/4 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 6 scoops Pyure Single Ingredient Stevia
- 1/2 cup Califia Farms Toasted Coconut Almond Milk
- 32 blueberries
INSTRUCTIONS
- In a medium sized bowl hand whisk together all dry ingredients until blended well.
- Add the vanilla extract to the coconut almond milk and add to the dry ingredients.
- Combine together to form a dough.
- Scoop the dough into 10 mini silicone muffin dishes or a mini muffin pan.
- Add 2 or 3 blueberries to each muffin. (about 32 blueberries or 1 oz.)
- Bake on 350 degrees for 20 to 30 minutes or until muffins begin to turn slightly brown.
- Remove from the oven and allow to cool for a few minutes and serve warm or cool.
