Keto Banana Nut Bread
INGREDIENTS
- 1 1/4 Trader Joe's Just Almond Meal
- 1/4 cup Flax Meal
- 1/4 teaspoon Himilayan pink salt
- 2 tsp Baking powder
- 3 eggs (large)
- 1/2 cup sour cream
- 4 Tbsp butter
- 3 tsp banana extract
- 1/4 cup heavy whipping cream
- 1/2 tsp nutmeg
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/4 tsp Pyure single ingredient stevia
- 3/4 cup pecans (chopped)
INSTRUCTIONS
- Preheat oven to 325 degrees
- Combine Almond Meal, Flax meal, salt, baking powder, nutmeg and cinnamon in a large bowl and hand mix until well combined.
- In a separate bowl, combine eggs, sour cream, butter, heavy cream, vanilla extract, banana extract, 1/2 of the nuts and stevia and mix using an electric mixer until well blended.
- Add the liquid ingredients to the dry ingredients and hand mix until combined well.
- Pour the mixture into a silicone bread pan and smooth it out
- Sprinkle the remainder of the nuts over the top of the bread
- Bake for 30 minutes until a toothpick comes out clean.
- Let bread cool to desired tem and serve.
